Wholemeal pasta with tomato, spinach and white beans.
Wholemeal pasta with tomato, spinach, white beans and tinned tuna in springwater. A high-protein, high-fibre, GLP-1 friendly dinner in under twenty minutes.
Cook the wholemeal pasta in well-salted water until just shy of done. Reserve a mug of pasta water before draining; the sauce needs it.
Warm neutral oil in a pan and sauté the garlic for 30 seconds until fragrant. Add chopped tomato, sea salt and black pepper, then simmer until the tomatoes slump into a rough sauce.
Stir in the cannellini beans and baby spinach. Cook just until the spinach wilts and the beans are hot, keeping some texture instead of smashing everything.
Drain the tuna and flake it into the pan in chunky pieces. Warm through for a minute — don't stir hard or it'll break down.
Add drained pasta to the sauce and toss with splashes of pasta water until it clings. Taste for salt and pepper before serving hot.
