Method

    Cook the pasta

    Cook the wholemeal pasta in well-salted water until just shy of done. Reserve a mug of pasta water before draining; the sauce needs it.

    Start the sauce

    Warm neutral oil in a pan and sauté the garlic for 30 seconds until fragrant. Add chopped tomato, sea salt and black pepper, then simmer until the tomatoes slump into a rough sauce.

    Add beans and greens

    Stir in the cannellini beans and baby spinach. Cook just until the spinach wilts and the beans are hot, keeping some texture instead of smashing everything.

    Flake in the tuna

    Drain the tuna and flake it into the pan in chunky pieces. Warm through for a minute — don't stir hard or it'll break down.

    Toss glossy

    Add drained pasta to the sauce and toss with splashes of pasta water until it clings. Taste for salt and pepper before serving hot.
