Steak, fried eggs and quickly wilted greens with garlic. A high-protein, low-carb plate that lands fast and keeps you full for hours afterwards.
Pat the steak dry and season both sides hard with salt only. Pepper goes on after cooking — pepper on a hot pan burns and turns bitter.
Cook the steak for 2–4 minutes a side depending on thickness and preference, then rest for 5 minutes. Resting keeps the juices in the meat instead of across the board. Once rested, grind black pepper over the steak.
Steam or pan-cook the broccoli until bright green and just tender, about 3–4 minutes. Toss with 10g of the butter and a pinch of pepper while hot so it glosses.
Melt the remaining 15g butter in a pan and fry the eggs until the whites are set and the yolks are how you like them. Season the eggs as soon as they come out.
Slice the steak across the grain and plate with the greens and eggs. Fan half an avocado (about 70g) alongside. Break the yolk over the steak and greens before eating.
