Spiced Leftover Chicken Burrito Bowl

Leftover roast chicken, spiced and piled over rice and beans.

Leftover roast chicken tossed in a smoky lime and spice dressing and piled into a bowl with basmati rice, mixed beans, sweetcorn, tomato, avocado and salsa. Serves 2.

Method

    Spiced dressing

    In a bowl, whisk the olive oil, lime juice, smoked paprika, ground cumin, ground coriander, garlic powder, chilli powder and salt into a loose paste.

    Dress the chicken

    Add the sliced or torn leftover roast chicken and turn it through the dressing until every piece is coated. Leave it to sit while you build the bowl.

    Prepare the bowl

    Dice the capsicum, red onion and tomato, slice the red chilli, and slice or dice the avocado. Divide the cooked basmati rice, mixed beans, sweetcorn, capsicum, onion and tomato between two bowls.

    Finish

    Pile the chicken over each bowl. Top with the avocado, red chilli, tomato salsa and sour cream, then crush the corn tortilla chips over the top and eat straight away while the chips are still crisp.
