Method

    Start the mash

    Cut the potato into even chunks and simmer in salted water until tender. Drain, steam dry for a minute, then mash with the butter until smooth and fluffy.

    Steam the broccoli

    Steam the broccoli for 3–4 minutes until bright green with a little bite left. Season lightly while hot so it tastes like broccoli, not diet punishment.

    Sear the salmon

    Pat the salmon dry, season with black pepper and a pinch of salt if needed, then cook in the high smoke point oil over medium-high heat (extra virgin smokes here — save it for the plate). Go skin-side down first if it has skin; cook until the outside is golden and the centre just flakes.

    Serve hot

    Spoon the buttery mash onto the plate, add broccoli and lay the salmon over the top. Drizzle the extra virgin olive oil over the fish and greens, then taste before adding more pepper.
