Method

    Warm the base

    Warm the brown rice and drained black beans together in a small pan or microwave-safe bowl with a splash of water. Season with sea salt and black pepper while they are hot so the seasoning sinks in instead of sitting on top.

    Prep the fresh bits

    Dice the tomato, shred the lettuce and drain the sweet corn. Slice the avocado last so it stays green and creamy.

    Layer for contrast

    Spoon the hot rice and beans into the bowl first, then add corn, tomato, lettuce and avocado in separate little piles. That gives you warm, cold, soft and crisp in every forkful.

    Wake it up

    Squeeze over lemon or lime if you have it, then taste. Add another tiny pinch of salt or pepper only if the beans taste flat.
