Bacon and Egg Burger Bowl

Bacon, eggs and beef mince over leaves with a quick burger sauce. All the burger flavour in a bowl, ready in fifteen minutes for a protein-packed meal.

Method

    Crisp the bacon

    Set a frying pan over medium heat and lay in 40g middle bacon. Cook 3–4 minutes a side until the fat renders and the edges go deep golden, then lift it out and keep the bacon fat in the pan.

    Sear the patty

    Season the 150g beef burger patty with part of the sea salt and black pepper. Cook it in the hot bacon fat for 3–4 minutes a side, pressing only once at the start so it browns instead of steaming. Rest it for 2 minutes while you cook the eggs.

    Cook the eggs

    Crack in the eggs and fry them in the same pan until the whites are set and the yolks are still soft, or take them further if you like them firm. Give the eggs the remaining pinch of salt and pepper while they are still hot.

    Build the bowl

    Shred the lettuce, chop the tomato and pile them into a bowl. Slice the patty, break over the crisp bacon, slide the eggs on top and finish with the mayonnaise. Taste the hot bits against the cold salad before adding any extra seasoning.
