Method

    Step 1

    Heat oil in a large pot. Sauté onion, capsicum, carrot and zucchini until softened.

    Add garlic and your spices (chilli, cumin, paprika) and cook 1 minute.

    Stir in kidney beans and chopped tomatoes. Simmer 20–25 minutes until thick.
