Method

    Step 1

    Heat a splash of oil in a large pot. Sauté onion, carrot, celery and garlic until soft, about 5 minutes.

    Add red lentils, vegetable stock and chopped tomatoes. Bring to a boil.

    Reduce heat and simmer for about 20 minutes, until lentils are tender.
