**The Nitrite-Free Myth**
Many people assume nitrite-free bacon contains no nitrites. That's often not the full story.
Many products marketed as "uncured" or "nitrite-free" use celery powder, celery juice powder, or other vegetable extracts naturally rich in nitrate. During processing, those nitrates are converted into nitrites.
The source changed. The chemistry didn't.
Cooking Uses
**What Does Nitrite Actually Do?**
Nitrite performs three main jobs in cured meats:
- Helps preserve the pink colour associated with bacon, ham, corned beef and many commercial square sausages. - Contributes to the distinctive cured flavour. - Plays an important role in food safety during curing.
Without nitrite, cured meats would look, taste and behave very differently.
**The Square Sausage Example**
Make two identical batches of square sausage.
Batch A contains Prague Powder #1. Batch B contains no nitrite.
Cook them side by side.
The flavour difference will be subtle. The colour difference will be obvious.
The nitrite batch stays pink. The non-nitrite batch turns grey-brown.
Neither is automatically better. They're simply different.
