Method

    Pound aromatics

    Mortar and pestle the chili and garlic into a rough paste. No food processor — texture matters.

    Sear the beef

    Screaming hot wok. Break it up but don't stir constantly — let it brown.

    Sauce it

    Oyster, fish, sugar. Toss until glossy. Should take 30 seconds.

    Basil bomb

    Heat off. Toss in basil. Residual heat wilts it perfectly. Serve over rice with a crispy egg.
